You don’t even need to crush it or warm it, but simply open a jar with a supply of fruit so that the room is immediately filled with the most magical smells. Voatsiperifery is an incredibly rare tailed pepper with strong, pine forest nose, and medium heat – distinguished by light, zesty flavours. Bourbon pepper has a special taste - noble, moderately sharp, fresh, tarry, woody, fruity and, moreover, surprisingly harmonious. Bourbon pepper can be used both with black pepper and instead of it, with the only difference being that the ringing aroma of bourbon pepper is better to spare and save from the long heat treatment, adding freshly ground bourbon at the very end of cooking.
