Historically established in the Diana and Sava regions in the north of the island, cocoa crops are well represented in Madagascar. It’s more specifically in the Sambirano Valley. Indeed, well known for its magnificent green landscape, the Sambirano valley is an ideal location for installing cacao bean plantations since its soil is fertilized by the river. Thus, the banks and the bottom of the valley are constantly enriched, allowing a good quality of production and a diversification of cultures.
Madagascar grows rare and unique fine flavor cacao, less than 5% of the world cocoa production. Aromatic and taste diversities have developed and adapted to the special environment of soil, flora and climate in Madagascar.

Unlike most cocoa producing countries, Madagascar does not grow just one variety of cacao trees, but three. The combination of these three species gives the island's cacao culture a unique character. Firstly, the Forastero variety cacao trees are very present and cover between 80 and 90% of world production. The Trinitario, for their part, represent 10 to 20% of this production. The Criollo (Fine Cacao) variety, for its part, covers only 1 to 5% of world production but is highly valued for its aroma and low bitterness. In particular the cultivation of this latter variety has enabled Madagascan cocoa to reach such notoriety today. It is grown without fertilizers and chemicals.
Cacao, the basic, main ingredient in making that arguably most delicious food in the world, chocolate, is actually a superfood. In its raw and purest form, cacao is so densely packed with antioxidants no other food can match it. It has one of the highest antioxidants and magnesium content of all food in existence.
Cacao powder isn’t your grocery shelf kind of chocolate or cocoa powder. It comes from the fruit of the cacao tree. Inside this fruit are seeds called cacao beans. After the oils have been extracted from the beans, what remains is grinded into a fine powder. Unlike cocoa powder, cacao powder has undergone very minimal processing which enables it to retain most if not all of its nutritional value.
