Madagascar pepper and, in particular, Baie Rose, takes its place among the most popular spices in Madagascar. These gourmet spices are an integral part of culinary preparations. Like all natural spices, it finds its place everywhere, whether raw, grated on a slice of bread, ground, in sauces or in a mixture of other spices. In addition to its strong aromas, peppers from Madagascar also have many advantages, like many other spices from Madagascar.

There are hundreds of spices in the world. Each of them has its own characteristics, and sometimes it is difficult to find words to give them the exact name. This is exactly what happened with Baie Rose, the classic spice of gastronomic cuisine. Madagascar's Baie Rose, which is often mistakenly called pink “pepper,” does not at all refer to the same kind as black or white pepper (which is Piper nigrum).

This tree loves warm, but not arid regions and is perfectly adapted to the dry climate of the Malagasy Highlands, as well as to the hot and humid zones of the eastern, southern and northern coasts of Madagascar.

Unlike pepper, the taste of its fruit is difficult to describe. Clad in a red dress, shiny berries impress with their very spicy taste with a sweet touch. Berries grow in clusters and become pinker as they ripen. Each berry is carefully picked by hand by qualified specialists, who then lay them out in the sun until they fully ripen, occurring under brackish winds constantly blowing from the sea.

After this, a long, painstaking sorting job follows, in which it is necessary to have an upmost patience, since a working day at best allows 1 person to sort 250 grams of our first grade quality pepper. And only after that the product is packaged in small boxes to best protect what some people call “ruby pearls” Our pink peppercorn undergoes 100% natural heat treatment and without any chemical input before final packaging and export.

1st grade: We select the most beautiful berries by hand.
